Your university should have some kind of access centre. Those are the people to ask; what can be done is different from university to university, and even from course to course. When I went, I was never given any fewer assignments, but I was able to get deadlines extended, and in some cases, actually hand in an assignment or two after the exams were done.

Talk to your school's accommodative services department. In general, they can do things like allow you extra time on exams, sometimes get equipment like CCTVs if you need it, etc. The exact accommodations would need to be worked out with your school.
When I was in college, I didn't have many problems doing homework and stuff, but I did get double time on exams and access to a CCTV (so they didn't have to enlarge the exams).
Also, even if your accommodative services doesn't require it, talk to all your teachers within the first few days of class. They'll be able to tell you what to expect from homework and stuff, and from my experience are more than willing to help you as much as possible.
