I've seen it a lot, mostly sunglasses. Is it to protect your eyes?

lots of reasons. Sometimes, it's hiding the eyes from other people - some people feel self-conscious of how their eyes appear to those around them. Sometimes, it's for protection. Sometimes, the person isn't completely blind. Both of my kids (one legally blind, one VI) wear prescription glasses. They wear them for the same reason sighted people wear them - to correct what vision they DO have.

And to add: plenty like myself(RP, ushers) are very light sensitive so using goggles and the like is a must.

Light sensitivity and to reduce sun glare are the main reasons why. It's also highly recommended by Ophthalmologists to protect the Retina from even more damage.
I wear sun glasses when I leave my residence primarily for the above reasons.

So I'm guessing that my assumption that most blind people just see darkness is wrong but it's also somewhat common for some blind people to experience blinding brightness. I guess that would make sense if your light receptor cells(cones/rods?) function but maybe the iris or cornea is what's damaged.

It's also a helpful stereotype to wear sunglasses. I'm legally blind and rather than explaining what that means to a stranger or someone I need assistance from I can just wear sunglasses and they just get it.
