Yes. If you call the airline in advance, they can have someone available to assist you with everything.

I met a woman who has traveled to over twenty countries alone, so it can be done! She said she researched a lot beforehand and found out about accessibility and services in each city and country she visited. Being prepared was critical and she really enjoyed her experience.

A guy that I have known since Junior High wrote a book called "A Sense of the World: How a Blind Man Became History’s Greatest Traveler" about James Holman.
It's an excellent book and I highly recommend it. If James Holman could do that on his own in the early 1800s when there was nothing approaching the ADA laws, you can do it too.
