I've been legally blind for a year and a half now thanks to a rare disease, and my mom is obsessed with curing me. I went through a period when it first started where I almost died, and was on way too much medicine. I love her to death, but she cannot accept the fact that I'm happy right now, and I'm content with just being a healthy, regular guy. She doesn't seem to get that I'm happy right now, and that my impairment isn't really holding me back at all. I have no idea what to do. She's so obsessed with trying to make me see again, when I just want to sit back and enjoy my life the way it is. What do I do guys? I'm so lost.

She's your mom, she just wants to help. It sucks being a parent of a child and not being able to fix something, especially if it's fruitless. My wife's dad and brothers were engineers and tried their damnedest to come up with a homebrew screen reader for her back in the day. Even i'm guilty of trying to do internet research on my wife's impairment.
I understand that it might be annoying to you, but hopefully you can just sit with her and talk about it.
What my wife just said: Parents can feel like it's their fault and if your mom stopped trying, she might feel like she's giving up.

Perhaps direct her towards disability pride pieces? Maybe send her links to articles posted by organizations like the National Federation of the Blind, or introduce her to youtubers like Molly Burke. Be persistent. Whenever she starts talking about things that she thinks that you can't do or how something will "fix" you, question her. Remin her that you're happy. Remind her that there are other ways to do things. Good luck!

Maybe she's feeling guilty and that's her way to cope it?
