I think sharpened is most the correct word. The blind musician is able to hear things in music that the sighted person can't because they have sharpened this tool through years of practice.

I've heard all three used. If you want to get more specific, people with vision loss have either been trained to use their sense more, or they are reliant on their other senses more and able to pick out more detail that people with vision may miss.
