I'm one of the mods of the Transcribers of Reddit, as well as a mod here. Just as a disclaimer: adding subreddits does have some bureaucracy involved. We do have a list of subreddits that we plan to reach out to in the future though, and I'll do my best to make sure any subs people request get on that list.
However, that doesn't mean we'll start transcribing there. If the moderators of a subreddit don't give us permission to transcribe in their sub, then that's the end of it. We don't work where we're not wanted. And yes, we have been refused permission in the past. However, if there are particular images you want described, r/descriptionplease exists and is really under-used!

Or if you just want to go through a big list of recently transcribed images, check out /r/tor_archive. You're sure to discover something interesting.
Also, to OP: this is kind of a difficult question you've asked. A lot of blind people just reflexively ignore image based subs. So you're sort of asking, "of these places you've probably never heard of, and have no idea what sorts of images they post, what would you like transcribed?" So it would not surprise me if your question gets no useful answers.
