Well, i don't think it would be disrespectful, but it certainly wouldnt be an accurate way to really get into a blind person's shoes.
To begin, most blind people have had experience being blind at least for a while. So simple tasks like cooking, traveling, and using technology would be much less daunting for us. I (and many of my other visually impaired friends) would be bored out of our minds if we had to spend a day without our phones! I'd imagine it would be hard to master screenreading software like voiceover or talkback in a day.
Also, a lot of what "the experience" (imo) has to do with how sighted folks react to us. The way that someone reacts to you in a blindfold would likely be very different from how people react to me with a cane. I've been cussed out, prayed for, ignored- you name it all on my adventures with my cane.
And lastly, blindfolding would only give you a bit of a totally blind person's perspective. Most legally blind people (myself included) still have some usable vision left.

What is your goal in wanting to do this? Is it like performance art or something? Putting on a blindfold for a day is no more accurate a way to discover what it is like to be blind than painting yourself a different color for a day to see what that's like.
