I asked my wife about it, who sometimes teaches knitting and have taught knitting, although I think it was mostly low vision people who were able to use ZoomText to enlarge the print. She sent me some links for you.

The one person I know who knits complex patterns who is totally blind uses a screen reader to read off the pattern, I believe.

I am knitting and I just can’t do purls I am always happy when patterns are without purls
I can avoid curling through letting my partner crochet Borders to my pieces
