I went to a school for the blind and visually impaired in southie Seattle, and was taught how to use my cane there. We started with indoor training and slowly progressed outside, and then progressed to finding local businesses, and then progressed to short bus routes and the course comminated with a monster route which included me finding 6 different businesses in Seattle, and I had to make it back to the school before they closed.

The sessions can vary depending on your goal and route, but they usually average an hour or so.
The sessions would also vary depending on your goals and skills. The more you want to do, the longer it would take. Some agencies may have only a set number of hours they can provide, though.
This also depends on your current level of skill and vision. When using a cane, there are a variety of techniques for different surfaces and different situations. However, if your vision is good enough you don't require the cane during specific situations, that technique may be skipped or covered more briefly.
