What are some apps that help improve accessibility on an Android phone? (self.Blind)

Depends on what you mean, apps like synaptic will completely change your android into an accessible phone for any V.I.P or just changing the home launcher to one with more customizations can improve its accessibility. E.g using Noca launcher with custom icons for higher contrast. If you mean apps for everyday life there are apps like Seeing AI, Be my eyes and many 3rd party camera magnifiers.

I mean apps that will make my phone easier to use.

So I would start with the accessibility setting upping the font and such adding shortcuts for the voice over aswell if needed. Then look into other home launchers, I use nova launcher with custom icons, so all my app icons are bright yellow on a black background, this helps me and may not be useful for others. And I use a clock widget called xperia clock and use the largest clock on my homescreen. The biggest issue I have found with accesabillity on android is non accessible apps where using the biggest font size makes apps break or cookies unable to accept. If your vision is past being able to read any of it then try a free trial of synapptic. It changes everything and comes with it's own voice over. Just it's not great with every app.
