This may be a dumb question, but to people who were or know someone who was completely blind, and had some type of surgery to regain vision, could you describe the nothingness of being without sight?

My friend who’s totally blind describes it as trying to see using your elbow.
It’s a sense that simply doesn’t exist.

Sure. I was born early, and my eyes were under developed. I had some limited vision when I was born. I could see some outlines and bright colors. I lost most of that by the age of 1, and I lost all of my sight by the age of 3. I don't have any memory of my vision, so it is like I never had any. When I was 12, they removed my eyes because they were causing me pain. Today, I have fake eyes.

When you do what I described, you're not supposed to be able to see anything. People with many kinds of vision impairment don't see darkness (which is the absence of light); they see nothingness (because they're receiving no visual stimulation at all).

Darkness is the same as no visual stimulation. Blind people see black, it's not "nothingness", it's black.
The little receptors in our eyes get triggered by light causing them to send out a signal to the brain. When there is no light, there are no signals, meaning you see black. So when there are no signals for whatever other reason, you should see black.

Now we're getting into logic. Darkness is the absence of light, but when a person has never seen light, they cannot be said to have seen darkness either.

I would have to disagree. I think I can get on board that darkness is, in this case, no visual stimuli, but I think we do associate darkness with black. The color black is a mixture of all colors. I think people who had vision at one point in time might see black. I see black when I put on a blindfold, but darkness isn’t the same as the absence of information at all. I don’t ‘hear nothing’ with my knee. My knee just doesn’t hear.
