I love minecraft because i find that the graphics aren't too noisy and you can turn up the brightness so it is easy to see. I'm more realistic looking games everything is desaturated to look more realistic but minecraft grass is bright green and the water bright blue ect. Also, minecraft has different sounds for almost everything which can be helpful.

When exploring caves I put up lots of markers so as not to get lost. My go-to is one block of cobblestone with a torch on top, then a torch on the side that leads back to safety. Really helps out a lot. I tend to focus on making things safe for traversal, I call it being OSHA complient and the people I play with think it's funny. But then they ask me to come in and fix paths they keep falling down in the nether...
I tend to have specific spots in the inventory I keep frequently used items, like sticks in the bottom right. I always keep the hotbar full of familiar things I can use quickly. There's a narrator in minecraft (I was surprised when I saw it), go ahead and turn it on. It doesn't do a ton, but it reads chats aloud and a few other things

I have about 30% vision on my left side and tunnel vision on my right.
For gaming I use a 15" monitor about 4ft away so I can see the whole screen.
I'm sure I remember something about the Bedrock version being at least partially accessible with a screenreader. At least the menu and chat.

Minecraft is one of the few computer games that doesn't strain my eyes because the graphics are so simple and colorful! I have issues reading the small text though, so I like using the Mac OS zoom feature sometimes. I also always play with a friend and I can just ask them over voice chat what the name of an item is/what something says in the chat if I'm having trouble.

I would just add that if you are on a Mac, use an external monitor, as the Mac screen seems darker or lower contrast than external monitors or other screens. Otherwise, I love the Mac OS zoom feature, so quick and easy for games like Minecraft!

I am blind in my left eye and partially blind in my right. I turn the brightness all the way up and sit less than a foot away from my 40 inch TV. I also live Minecraft because of it's simple design so it's not too hard to navigate in-game.

I moved over to Bedrock version to play with more of my friends, I greatly prefer Java version.
That said, texture packs. Search for 'accessability' packs. Some are a bit dated but still work. Made a SIGNIFICANT difference for me to identify iron, diamond, etc.
Edit: I also play on a 22" display upon an articulated arm mount so I can bring it as close or far as I need depending on vision issues of the day.
Use Microsoft's built in Windows Magnifier if you need. It tends to work lightyears better than ZoomText and others for gaming.

Just a quick update, I bought and installed the Minecraft app for iOS and it also seems to have a certain degree of accessibility to it. At least, it has a self voicing screen reader. Not perfect, as you will have to constantly move your finger around to find what you can click on but for the initial screens that I ran across it seems to function just fine.
