Standard VR Headsets for playing World of Warcraft Classic (self.Blind)

I want to play Classic World of Warcraft with my sister who is visually impaired.

Background - I am in California, Sister in Florida has severe vision issues, she can read if she holds a book to her face, she walks around stores and such without assistance, some might not even realize she is blind. She can use a computer with special adaptive software that magnifies print (Vista?) but doesn't really use it much at all...too much trouble.

I am not looking for "Virtual Reality" - I am looking for two high definition screens close to each eye that can provide for a virtual very large screen and perhaps allow her too follow me around WoW and quest together. If each eye could be "focused" even better. I will use headset/chat to help guide her on what to do.

I know about the $5K -$15K virtual glasses they are selling now, but I want to use existing standard $500 VR headsets, like Oculus. Again, I am not looking for VR or specialized software, simply HD screens in front of each eye that can display non-VR WoW classic game and computer screens.

Any suggestions?

Personally I advise against this, because when you are in front of the screen you can always lean forward to see more detail, an ability which is lost with a VR headset. If she has enough vision to not look vision impaired in some circumstances she's likely fine with a regular setup. I've played World of Warcraft as a tank from vanilla to Wrath of the Lich King with 10% of vision and did perfectly fine.

If I recall correctly, you can customize the UI scale in the game's settings, and even if that was not possible there are still a number of add-ons available that can address this issue. For example I used Grid and ArcHUD to position all relevant information in the center of my field of view so I wouldn't miss anything despite playing very close to the screen.

Some people even play World of Warcraft totally blind, though the excessive dependence on others to act as guides puts me off from trying it myself.
