Been wondering for awhile. Anyone have thoughts on this?

Not sure for a cat, but a blind friend of mine has a (untrained) dog who definitely knows. It moves out of the way, and always gives audible or tactile feedback.
They might take a while to learn, but they will, animals are not stupid.

I tripped over one of my dogs earlier, while I was leaving the kitchen, because he was patiently waiting until I was done so that he could swoop in and find anything that I dropped on the floor while fixing dinner. Several minutes later, I was walking out of the kitchen again after checking on the food in the oven, but I made a point to walk around the other side of the island because I knew the dog would still be in the previous location. I tripped over a different dog who was waiting on me to leave the kitchen for the same reason,
When my food was finally ready, I managed to drop a small piece on the ground while putting it on my plate. I heard all three dogs scramble to their feet just outside the kitchen waiting for me to sit down at the table so they could run in and try to get the single piece of food that I dropped.
Was it because I can't see well? Maybe,
But it's a symbiotic relationship in the way that I was happy to not have to clean up what I had dropped. Dogs are the best.

I have 5% vision, which can be useful at times and not to much at others. Example being when I was calling my dark brown cat out from under my desk for a good few minutes only to realize the dark blob was actually my boots...
My cats know.
Cocoa frequently gets in my way and gets offended if I step on him (I think he does it for the pats that come after). He uses it to his advantage when he wants to get away with something.
Latte stays out of my way and frequently meows to let me know where she's at. For example she will meow if she's in the room when I go to have a shower so I can let her out first - she's extremely talkative.

My cats know, heck my sister's cat knows despite only living me with two years our of the year.
But my dog is still SHOCKED when I trip over him when he sits right by my feet. He gets up all shocked and offended, despite this being an issue for six or seven years.

My wife and I have wondered the same thing with our cat. She is very very vocal, mor so then I believe she would be with other people. On the other hand however, she will get in front of us and just stop. I always feel bad when I hit her with my foot, but I always give her atention afterwords, so I think the person who said it's on purpose might be on to something.

My childhood dog knew for sure. We actually did not notice this until the vet pointed out that his demeanor was much more calm around me. We had a pretty huge yard and he'd always let me know where he is whenever I got outside.

It seems that they learn quite quick what you can or can't do due to your blindness, not necessarily that you're blind (i. e. they don't always think of the ramifications of blindness). Guide dogs that seem to understand that a person is blind (for example, silently "steal" a forbidden object right under the blind person's nose) don't understand by themselves that while guiding, they need to go around aerial obstacles (signs), even after we let them make the mistake a couple times.
I've spoken to blind people about this with cats and it seems to be the same case: even the blind people that are adamant that the cat knows they are blind, don't figure out necessarily of the ramifications. They are quick though to ask for food when the bowl is empty, to get out of the way etc... but these are also things they have learned through trial and error and seem to understand that the person needs audio cues rather than visual ones, but we're not sure they understand the bilnd persons point of view necessarily. (I also had a source for this but it was an article in a magazine at the guide dog school so can't link it here)

Well, my cat knows something. She's not allowed on the kitchen counters, but she knows that if I'm the only one in the house, she can absolutely get away with it. Once I was doing something in the kitchen, and she was just sitting on the counter next to me; I touched her by mistake, and she was all like "Gurgle! Pet me? What, I'm not doing anything wrong! Meow?" I'm not sure if she knows I can't see her, or she just thinks my rules are different because I don't yell at her about the same things everyone else does.

Definitely. Our cat figured out I'm blind, and will now always alert me to her precense while I'm walking around the house by giving off a quick meow so she doesn't get accidentally kicked.

My dogs also definitely knew I was blind, and would always get out of the way while I was walking around. Took them about a month to figure it out after I first went blind though, and for the first while they kept wondering why their dad all of a sudden began kicking them all the time, lol.

Cat jumps up on the counter and when I move to grab him he backs away silently so I have to reach around a while. I think they know lol.

I'm not sure about cats, but I have a theory about dogs. I had several dogs during my life and I think they know something. I don't think that the dog knows that I am blind, but the dog knows I act differently to the rest of my family. She knows she can get away with stuff when she is across the room from me. She also has learned to stay out of my way because she will get tripped over.
I think if we could ask my dog if I could see her, I don't think she would have an answer.

i think my older dog may know, she's very considerate about not standing in my way and generally attempts to clean up where i've eaten when I'm finished.
my younger dog might know but probably not. he's a very excitable dog and jumps up at me whenever I enter a room but no longer jumps over chair arms to get to me or jumps up at me suddenly.

Yes I had a cat and he would meow a lot whilst coming in my room as if he knew to tell me he was there but never made noise when he went in a different room
