Need some outdoor date ideas during this pandemic (self.Blind)

We've already done drive-in movie theatre, picnic, walk in the park, dinner & movie, mini-golf, cooking together.
I've vision loss (29M) & the girl is sighted (29F). We can't be indoors together as she's a teacher and at high risk of COVID.

Boat rental places have a lot of cool options if you're near a large body of water. The one we went to had everything from kayaks to water trampolines to jetskis to parasailing!
