I imagine that some blind people do. In the past, audio journals recorded onto cassette tapes were quite popular, and I imagine the modern-day equivalent is audio memo apps for smartphones.

I still have an mp3 dictaphone. Admitting that makes me feel old, but it's just so quick and convenient in the way that phones aren't. Don't use it for profound thoughts, though. More like "cab is due at 11" or "buy pizza."

Yeah I do. I keep an encrypted flash drive with a bunch of txt files organized by month and year

I did for a while. Digital. The other alternative (at the time) would have been binding up sheets in braille out of my Perkins typewriter. That would quickly become tedious.

Yes, there's are lots of Journaling apps on the iTunes store that are voice over compatible.

I would like to start journaling my life, but I don't know what to write. I would do this in Braille, using my slate and stylous.

Had a Word document for that back in 2017, but stopped writing when I got bored. When I was a little girl I had a paper one. I figured since I used braille nobody would be able to read it anyway. Was a bit hard to write in a notebook using a Perkins but it worked if you had the little thing holding the pages together at front instead of the left. Sorry if I made any typos, I blame that on being from 🇸🇪.
