Help needed - how to structure information for visually impaired students(self.Blind)

I've recently started working with two visually impaired students to help them with their academic studies and I'm hoping to get some advice on how best to do this please.
I'm wondering, Is there a particular structure or method that is most useful for transcribing academic information such as graphs, charts and diagrams?
I also need to add review notes to assignment drafts.
Can anyone provide any tips, resources or links I can read to understand how best to do this please?

I'm going to need waaaaaaaay more info. What is their vision level? What is the subject? Are they braille users and do you have access to technology to create braille documents? Are we talking high school, college or what?

Thanks for the response and sorry for the lack of info. I'm very new to this.
I'm assisting University students studying psychology. I believe they have access to text reader software and they have only about 3% eyesight.
I need to transcribe course material for them to use in assignments.

Could the disabilities office help? They may have an embosser which is better for graphics. Use tactile graphics.
