Hey, what OS are you using? If you're on Mac, you can turn on VoiceOver, and if you're on Windows, the default screen reader is Narrator, but personally I would recommend you just install and use NVDA.
I really dislike text recognition, it's so finnicky and not always reliable, is there any way you could bug the professors to just send you the materials in text PDF? It would help you so much since you won't need to go through all that extra process of recognising images.
I don't know what university you go to, but most universities have a disability office. Could you check if your university has one and if yes contact them? Tell them all that you've been struggling with and ask them for help.
Also, what is your level of visual impairment?
