What is the preferred indentation style for raw digital text content? (self.Blind)

Would there be a default bullet style?

I'm referring to pure raw text and not any structured content, like markdown, html, xml, etc.

Good point, I suppose a .txt file would be an example. How should lists be formatted there?

Use numbered lists for ordered and unordered content.

If you did want to use bulleted lists, you'd need to use different bullet shapes for each level with no repeated symbols, and ensure that a variety of screen readers read them differently.

For bulleted lists, each nested level should use a different bullet shape.
