Sorry, if you were using them in English, it would depend on the English code. In UEB all the modifiers are listed at https://www.nfb.org/images/nfb/documents/pdf/lesson16.pdf

generally-speaking it's the driving screen reader on the device that tells the Braille Display what ... er ... braille to display.
I know that iOS and Windows do this quite well.

Is it possible for the display to not show the accented letters at all?

There is an Esperanto Braille code.
In this case the accented letters add dot 6 to the conventional Latin alphabet, so ĝ becomes ⠻, ĉ ⠩ etc.
