Are most screen readers able to read markdown files including when you view/preview them to show the headings, links, etc? (self.Blind)

I actually like markdown a lot since it doesn’t break the reading flow that much.

Yes, when you create MD files with proper markdown, we have a variety of ways to open them and have them rendered in HTML navigable format so screen readers can treat it like a website. I regularly write markdown for my github readme files using TextEdit, and then test the files with Markdown Editor before pushing them to my repositories. Just make sure you are using best practices in terms of heading order, meaningful link text, etc.

Has already has been answered, yes! That’s the beauty of markdown, is it a simple lightweight way to format document that everyone should be able to read either with speech output or Braille.
