Can confirm, is possible, though it works best when you have a sighted friend you can run with. You can then follow them and screen share so they can direct your mouse when things need clicking.
AudioQs and Blind Assist are must have addons. Other useful addons are DialogKey (hasn't been updated in forever, I have some issues with it, but if it was fully functionally it'd be amazing for blind/VI WoW players), GTFO, and Tell Me When (depending on class you're playing and if you've someone to help you set things up).
Then you've got your key bindings to attend to. You want to make sure you have a key bound to Follow and another to Interact with Selected. You also want to set Target of Target to your preferred key (default is F, which is what I stick with). A keyboard and/or mouse with function keys is also very helpful to have abilities on additional action bars bound to those additional buttons.
All in all I think WoW is the most accessible mainstream game I've played (not that there are many I have tried).

After a quick Google search,Youtuber thekephas has a 2018 video with his add-ons. That might be a good starting point. There was a Warcraft for the Blind project, but it seems to be discontinued.
