I use drafts to zip notes into dropbox, recup to do the same for audio. Alexa's lists also find their way into my dropboxed text files thanks to IFTTT.
Google Keep when working with sighted people who also use it.

Honestly, I haven't found one I really like.
OneNote is fully accessible, but also often way too involved for what I want it for.
The other ones I use, however, are pretty situational and probably won't help you much, those being Cherrytree on Linux and TiddlyWiki in a web browser.
Markdown in a text editor of choice might be best; can even sync it between devices using Dropbox.
