If I wanted to make a metal sheet with a poem on it could I do both sides or should be one sided? (self.Blind)

You can do braille on both sides of a page (it is called interpoint braille), but it is normally done on paper. Are you planning on using a punch to punch out braille on the opposite side, or adding dots?

It would be dots on both sides. It would look like glass art, like different colors and visually painting a picture or saying one thing but when read in braille it's a poem. I wonder if a braille reader who is blind would think to flip it over to read the back

For like braille art I think it’s more stanrdly just done on one side I think but I suppose there’s nothing wrong with doing it on both.

Braille on paper (using a slate and stylus) is done on reverse, because the punch punches outwards. If you were to use a braille typewriter, the machine already punches from the back.

If you are adding something on, say beads of glue or beads of glass, you can glue them to the front.
