There's kind of a thing where a lot of blind characters in fantasy or science fiction stories have special powers or amazing technology that makes them awesome. Daredevil, Toph from Avatar, Geordi la Forge from Star Trek. There's nothing wrong with that, it's a totally valid story, but a lot of people would probably say that those characters aren't really blind on the basis they don't really have to deal with it in any realistic way. As I say it's fine, nobody is doing anything bad, it's just that it doesn't realistically show what it's really like.

As to respect, personally I think anyone whose self respect is so fragile that it would be somehow mortally wounded by a video game character has bigger problems than the video game character. I wouldn't give it a second thought unless someone deliberately created a character in an attempt to be unpleasant, but I can't imagine anyone would ever do that.
