I don't know about the ipad pencil, neither can I work out how it would help.
Did the "geniuses" show you how to use the Zoom, VoiceOver and colour invert facilities to be found under the Accessibility settings?
The Zoom feature will zoom the whole screen and let you pan the content so you can see all of it. This feature is independent of the app running so will work with everything.
Voiceover changes the whole user experience to one tailored to blind / low-vision users with nearly everything spoken out loud for you.
Colour inversion might help if you prefer white text on a black background.

An Apple Pencil is absolutely useless to a blind or visually impaired person. It does the exact same things that your fingers can do, minus pressure sensitive artwork.

Skip the Apple Pencil. Learning how to use voiceover and other accessibility features on the device is much better.
