I have used chopsticks usually because I am Japanese. When I use fork and knife,
I use fingers a little not to move food, sorry it might be not good manner there. I imagine food clearly in my mind like I could see when I eat. It is very helpful. I hope it can help you.I feel it is stressful that you have to worry when you want to eat out your colleagues.

May I ask if you are American? If so you may want to consider the European style of using a knife and fork. That means keeping your knife in your right hand and your fork in your left hand and not putting it down and the only using your fork as is more common in America.
This way you can use the fork and knife against each other and that will help you to find food and to make it more compact if that makes any sense.
For burgers I always was taught growing up to cut them in half and I still do that and I keep the bun and the Burger and the filling aligned by pressing my knife against it as I need to.
I also agree with chopsticks although bamboo is generally easier than any type of lacquered chopstick.
So my suggestion would be to consider global methods of eating and you might find that things get a little bit easier. Good luck!

A salad is served in a couple of ways. Some places cut the ingridiants into bite sized portions. If this is not the case, you could request they chop the items a bit smaller for you. When I go to What-A-Burger I request for the burgur's vegetables to be chopped and I started this request after having dinner with a sighted friend who made this request. If items are too big, it's okay to get the knife and chop the salad to your liking; actually, this is expected because it's not proper to bite half of a vegetable and then placethe other half back on the plate.

Proper, LOL. I am so not proper despite my efforts. If I’ve got a big plate of salad, I find it difficult trying to slice it up precisely into bite-size pieces. The suggestion to ask for it served that way sounds like something to try, though. Thank you for the reply

Forks, spoons, and knifes are held differently than one another, and there are a couple of common standards. Have someone demonstrate the correct way of holding these tools and practice using them in the comfort of your house. Practice cutting with a slize of pizza, the motions are similar to when you'll get a stake at your favorite restaurant. It's okay to ask for the cook to chop the stake in the kitchen, but I find it more presentable when I'm cutting it myself. Note, a sharp knife is more helpful than a dull knife.

Would chopsticks maybe work better? You'd know the approximate size of the food by how wide they were open.
As for burgers and stuff, ask for light sauce at restaurants and that'll help.
Dip the fork in the dressing, then pick up salad. Don't drizzle the dressing and it'll contain the dressing to the size of the fork.
