Why can't you do both? It is not an either/or.
For example, a woman I know is completely blind and owned a pottery studio. She specialized in therapeutic pottery - worked with rape victims, trauma victims, get some of your feelings out into the clay, etc. I know blind cooks and blind florists and blind DJs and blind gardners. I know people who are blind who do beadwork and who write poetry and who make sculpture.
There is a steady supply of people who have lost vision due to accidents/diabetes/macular degeneration/glaucoma etc. This is an enormous "OH NO MY LIFE IS OVER" for most of them. There is always going to be a need for teachers and people who have been there and know what it is like without sight; creative work is an excellent therapy tool.

I would say for assistive tech it depends on how technical you are and how good at tech work are you. Those of us who do at is pretty techy. And get involved and code or tinker or both.
Also do you do any informal or formal assistive tech type stuff? As in volunteer for informal. I volunteered and worked od jobs and basically served for free in academic assistive tech for 10 years. Decided I liked it so much to study compsci.
