Was wondering about ring. Any suggestions would be helpful.

We have a Yale lock that connects through an August bridge. It can be set up through Google and HomeKit, but I primarily use it through shortcuts on the Today screen on my iPhone. The august app definitely has accessibility issues with VoiceOver, but is usable once it's set up.
Since you mentioned Ring, we have our own independent Eufy doorbell cam which works great as a recorder, intercom, auto-message replayer, and our phones will alert us and allow us to interact with people on our doorstep even if we are not home which has been pretty great. The Eufy Security app also has a myriad of button labeling problems, but once you get the hang of it, it's decently usable.

So something like this would work: https://www.apple.com/shop/product/HPAQ2ZM/A/yale-assure-lock-sl-touchscreen-deadbolt-satin-nickel

Yes, it definitely works via HomeKit or the August app. I never interact with the touchscreen itself, I always just pull up the shortcut and unlock the door with my phone. Locking the door is super easy as well, since all you have to do is touch the top area of the lock touchscreen to lock the door when outside. And if you go with this solution, remember to keep a 9 volt battery around outside that you have easy access to in case the lock batteries die. There are two power terminals on the bottom of the lock that will power the lock enough to unlock it when you hold a 9 volt battery to them. Just a precaution. :)

Are you able to change the lock codes with voiceover?

Yes, I can change my personal/owner code and manage the guest list access for other people. You can even set a time limit if you need to grant temporary home access for workers, deliveries, etc. The guest access tab in the August app and the flow to give a code to a contact is super easy to use with VoiceOver.

Mine is an Apple home, so I go for Homekit. My current lock is Reagle, and has a keypad on the outside. The iOS app isn't great, but it's usable. I've made codes for the people in the home with little trouble. I use VoiceOver.
There are other options, but I haven't used them. I have had an August lock, and that app was worse than Reagle, but technically still usable. However, I didn't have a keypad with that lock. Sorry I can't answer your question about Ring specifically.

Can you link me to the exact lock you are talking about?

Sure, here's the $1. I'm in the U.S. Also, there may be other locks for cheaper that still work, especially if you don't care about HomeKit. Good luck with your search.

Sold out. Happen to know an alternative? Ring seems nice. anything that works with Apple HomeKit should work decently well with my iPhone and a HomePod, correct?

Homekit means you can use it with HomeKit apps, many of which are accessible. However, the question was specifically about adding PIN codes, which can't be done through HomeKit. To do that, you have to use the manufacturer's app. August and Reagle are the only ones I have actually used. Ring is not compatible with HomeKit, and I don't know how their app is besides.
