What are some good "experiences" i could arrange with my visually impaired girlfriend? (self.Blind)

My girlfriend's birthday is coming up and I want to pay for us to do something together. She has recently been bungee jumping with a friend, and next week we are climbing the O2 (Millennium Dome) in London, so she is into thrill-seeking type stuff, although it doesn't necessarily have to be.
For context she has Optic Atrophy, and so has very limited vision and is registered blind.
Any suggestions would be greatly appreciated

Check with your museums to see if they allow for tactile tours.
If the museum does, the participants may have to put on special gloves to protect the art/exhibits, but it can be a cool experience. When I did it with a camp, the kids got to touch some ancient Egyptian artifacts, a few dino fossils, some sculptures and a few other things.

Thanks everyone for the recommendations. Think I'm going to treat her to a spa day as she likes that, but the rest of these options are great for date ideas or future birthdays

I go rappelling down waterfalls sometimes, and it's best to do that in summer so you don't die of frostbite. Various places organise scrambling down waterfalls and rapids and stuff. Climbing in general is great.
And I went for a ride on my buddy's motorbike today, which isn't something I like doing too often as I want to die of natural causes one day, but if she's into thrill seeking, er, yeah, that.

Will sound weird but rnib or sliverstone etc might arrange driving experiences, they do here in Ireland. Also if driving is a thing she's wanted to do, karting or some actual driving schools have their own "fake roads/town" to drive around and legally she could do that
