I have been working as a "self-taught" ABAP developer with great business analysts for some time. I don't have any formal SAP training, and honestly I only really get the pure ABAP things, but if you ask me the only way to get up to speed is to get official SAP certifications. SAP is just not a "Googleable" piece of software if you know what I mean. It's far too complex. I bought books on some modules but I find them incredibly unhelpful since they feel more like a reference for people who know the system very well rather than anything else.
As for the blindness aspect, I use magnification software and that works. But honestly I'd just push for Fiori. SAP GUI is really quirky, ugly and frustrating to all (yes, no most, even Hasso Plattner dislikes SAP GUI) your sighted peers too and its a huge productivity drain (you can barely copy and paste in SAP GUI).
Sorry that I cannot really be much more helpful. SAP is just so big and its in own ways always niche-y.
