Has your SM printed out the Deployment 2.0 pages? Do y'all have them in a notebook? For example, my store normally runs a 7-Partner weekday peak, but this week we are down to 5 Partners for peak (we're a DT/café store), and I looked up what would've been the best play for that daypart. Yes, our DT times were higher with 2 less people...by 5 seconds.
Are all of your Partners working in routine? I ask this because it's crucial. You may be doing split production (café bar & DT bar), but if your bar Partners aren't communicating with each other, your times are gonna go up. For instance, if your DT Partner has 6 lattes to make, and there's no café drinks to be made, there's no reason why the café Partner can't help out with those lattes.
Also, if your DT has a bunch of food to heat up, and your café is empty, a quick "Hey, can someone toss a bacon gouda in the front oven for DT?" will really help keep your times down.
Going back to the 1st point about having the Deployment 2.0 pages printed & up to date: the system updates your store's product mix every so often. If your store does more espresso beverages than, say, food, a Partner will be deployed to bar. If your store does more warmed food, or you're in GO mode (fancy Sbux terminology for being short-staffed), your CS will become your food Partner.
Also, as a SS, even when you step to the back to do your stuff, you should wear a headset and/or check in with your team periodically. I receive the order, check in with my team, input the new order in IMS, check in with my team again, start my pull, check in with my team, etc. I know it's a challenge, but I get that stuff done, plus run 2 10's before 7am, so that *everyone* is on the floor for the 7-11am peak time, since that's what that stupid monitor reports for the daypart.
