Frustrating cold brew tank prep (self.starbucksbaristas)

Anybody else find the system for prepping cold brew tanks annoying? I feel like I’m missing something, none of it makes sense to me.

Instructional materials say we should be mixing ice and filtered water by hand for 2 minutes until the ice is fully melted, otherwise the cold brew tap system could be negatively impacted (by ice chips?)... but ice doesn’t melt that quickly, even at psycho-whisking speed, unless we should be using hot water? Also, if we’re expected to chill the cold brew for 4 hours, shouldn’t we also just chill water for the same time? What is the “ideal temp” for the cold brew/water pre- and post-mixture?

At my store we 100% just chill pre-measured water. If the keg, brew, and water are all chilled for some time before assembly it's plenty cold.

I totally understand your frustrations!! I've asked many different people why we don't just chill the water instead of whisking in ice cubes. The best answer I've gotten is that it reaches the correct temp that way and we should follow the directions because we need to be making it to standard. (Which is not satisfying but whatever not going to argue)

We are supposed to use the same room temperature filtered water that we use for iced teas and water cups. Once you put the ice in start whisking right away very vigorously in order to make the process as fast as possible. Make sure that you don't try to do multiple kegs at once this way because the longer the ice is in the water, the harder it will be for the little cubes to melt towards the end because the temperature of the water will have lowered too quickly. That being said, it still takes a while for each keg to be made. Hope that helps a little bit 😅 Good luck!

Also make sure all the ice is completely melted like no chips whatsoever! Because once it goes into the keg the whole thing holds its temperature and so the ice won't melt and then ice chips will get stuck in the line and cause the whole thing to bubble like crazy at the pour spout and then stop working.
