Cold foams preparation (self.starbucksbaristas)
submitted by nika916
Hello! Could someone tell me how to make each of the cold foams please? From which ones get pumps of syrup to the number I have to press on the blender. Also, to what line do I have to pour the cold brew when it gets the foam? Does it get water as well? Thanks so much in advance

It’s things like this that make me wish corporate would develop an app for baristas. Make the coffee passport and the handbook digital, as well as have all the recipes and correct ways to make drinks so that these kinds of questions won’t end up in two baristas fighting over the proper number of shakes a whipped cream gets.

Frothed on 3:

Cascara: 2 pumps cascara, nonfat to 100ml

Plain: 2 pumps vanilla, nonfat to 100ml

Salted: 2 packets salt, sweet cream to 100ml

All these cold foams can be increased by adding 1 pump/packet per extra 50ml of dairy.

Frothed on 4:

Iced capp: 2% only

Cloud: 2% to 100/150/200, 1/2/2 pumps syrup, 2/3/4 scoops cloud powder.

Thank you so much! One more question. Do the packets of salt go in before blending? Or on top of the foam?

There is NO VANILLA IN THE PLAIN COLDFOAM. Coming from corporate. Verified by actual recipe creators one of them. Ex: if it’s a cold brew cold foam. Just nonfat foamed on 3. Please practice consistent standards. This was never changed.

The original and updated(Jan'19) cold foam recipe cards both say that standard cold foam gets 2 pumps vanilla. This is the standard build for the US. Unfortunately, if the "original creators" of the cold foam didn't intend for vanilla to be included, their opinion was overridden by whoever finalized the recipe.
I do practice consistent standards. That's why I post on this sub in the first place.

There's vanilla. Also, corporate, why did you switch cold brew back to 5 days if you're gonna mention consistency..

Assuming your store doesn’t have the cold brew station (which means that in the next coming months you should be getting it set up overnight) it’s cold brew to the first line (on whichever cup size) and then water to the top line.

Cascara cold foam is 1-2 pumps of cascara syrup, nonfat to the 100ml line, blended on 3.

Salted cream cold foam is 2 packets of sea salt and vanilla sweet cream to the 150(could be 100, I’m not 100% on this one because it is so rare) blended on 3.

Regular cold foam is nonfat to 150 blended on 3.

Edit: Yes, you add ice, but only a little so you have enough room to add the foam and make it purdy.

Regular cold foam gets vanilla. The only unflavored cold foam is for cappucinos.
TheBoisterousBoy 4 points 4y ago
Are you sure? Cause I’ve never heard about our regular cold foam getting anything and I remember the paper not saying anything about any syrups.

Same I’m so confused I keep seeing people say regular cold foam gets vanilla and I have NEVER heard this I’m so confused like if I wanted a cold brew with cold foam nothing else I never put vanilla in it

Why are people booing you, you’re right 😂
mcr0414 2 points 4y ago
When did this change? I’m so confused I have never heard this! The vanilla in cold foam we put it in is the Carmel cloud nothing else! I’m so confused!

When I first started I would put vanilla in cold foam because I thought that was how it was made because of the cloud macchiato, but then I asked and there’s no vanilla. So now I’m confused on why some use vanilla and some don’t. And I was always using 2% 😂 I now realize that I’ve messed up so many cold foam drinks

I asked my store manager today and he said there is no vanilla.

Tell your manager to check the cold foam recipe card.
