Trainer here, I do it for licensed stores but still. We are allocated 40 hours of dedicated training time, which is usually about two 20 hour weeks just because there is so much stuff. However, I have definitely kept people longer because I don't want to send them out without fully training them. Even then, when I do send my ducklings into the world, they don't know everything and they go knowing that. I can't teach every single possibility.
It sounds like they may have gotten extra hours to train you or just kept training you on normal scheduling hours, both of which are fine. I'd say a month to six weeks minimum before you can do every single task and shift with 98% confidence, but that also depends on how much you're working and how helpful everyone else is. Be warned: even after years something is going to throw you off and you'll have to get help.
