Customer ask me to add toppings at the bar? (self.starbucksbaristas)

I’ve been working at Starbucks for two weeks, and today one customer asked me to add caramel crunch topping on her mocha frap which she just got at the moment. The sticker didn’t say “caramel crunch”, so she didn’t pay for it.

I thought I gotta charge her for the topping, but there was line at the till and she was like “Just a little! Why do i need to pay for it! Why do i need to line up again?”

Honestly I was little scared and I just added some. After that, I asked to my shift manager, but she was like, “Just give it to them to avoid troubles”. And apparently she does the same thing for many times! (I heard this from different coworkers, not SM)
I felt guilty for every nice customer who just pays for toppings since I couldn’t even say anything to her.;(

So I’d like to ask you what you do in this case, and what I should have said to her?
Since I’m foreigner and still learning English, so I’m mot really sure what is polite way to say “I gotta charge for it, sorry”. I don’t want to be mean or not polite...

*As I said, I’m still learning English and I know my English is not good, so if the sentence was strange, I’m sorry.;(

My SM would say give it to her and say "i can do it this time but next time please ask for it at the register as it is an additional charge"

People do that sort of thing all the time. After they're rung up and I start making the drink, they say, "Oh! With almond milk please" They know they're supposed to pay for it and they pull this nonsense, cuz you are told to just do it to avoid problems

oh no..;( I just saw only this lady, but it’s just so sad! So sad people do this kind of nasty things to save 60 cents or something... Thank you for sharing your experience!

Honestly you really have to trust people, and make the moment right. If someone is really intending to get something for free out of you, you can tell. Don’t let people play you. But still be kind and delight someone if you can. Even if they didn’t pay for it. That’s what making the moment right means.

Thank you. I honestly thought “I don’t want to do something unfair..” at the moment, so I donno maybe I didn’t really look happy to help her. Thank you so much, I’ll remember what you told me.:)

Always assume positive intent and make the moment right. These are actual Starbucks standards. At my store we don’t say anything unless we notice the same person doing it multiple times and then we just explain to them that we can do it this time but from now they need to ask for it at the register so we can charge appropriately and account for products used.
