tips for quickly setting up pastry case?(self.starbucksbaristas)

i hate setting up pastry case. today was my second time doing it, and it took me ~30 mins to do it. i feel bad but i went a bit slow so i wouldn’t mess up. i also had to pull new pastries and out day dots on them so that took me 15 mins before i could even start on the case. any tips on how to get faster at setting up the pastry case?

it’s strange that you have to put the stickers on pulled food during an opening shift ... your shift supervisors are normally suppose to put stickers on the night before when they do the pull.

Every store is a little bit different. I usually have a barista do that while I'm brewing coffee, tea, and counting money.

i also think they just had a rough close from the night before. some things weren’t prepared like they normally are.

You’ll get way faster the more you do it, also just start from one side and work your way over, you’ll memorize what goes where in no time

Normally when I do pastry case I work from right to left. And our SSV’s put day dots and new pastries out...when we do pastry case all we do is wash and reset it for the next day.

Yeah but you do the case at night for the openers justin I think they are referring to the am set up which takes a lot longer with the sammies :)

Hey! I’ve been an opener for about a year and a half, working for three. The EASIEST way to do the case is leaving everything in their packages for pastries, and taking out the white holders for sandwiches and placing them in order; when you warm them on display setting you’ll know where they go after you finish! It’s a groove you’ll have to get down. It’s doable in 10 minutes if you can memorize everything and cut the oven on the moment you pass the door to clock on. You can always make the oatmeal/egg bites look prettier later with the cutting and wrapping. It’s essential you prioritize pastries and the oven being on! Good luck.

I pull all of the display stands out onto to the pastry cart. Like everyone else said I work from one side to the other. When I put a pastry in the case I fifo that pastry and make sure the older pastry are in front of the pastry tray. Takes me on average 20 mins. When I have to do breakfast sandwiches takes me the full 30 mins. Stickering of the pastrys can wait till you open besides the actual pastry case stickers.

Yeah fifo can wait till after opening if need be. The main objective is to get the case set up. So until you are comfortable doing that dont stress about the other stuff. It comes with practice, like everyone says. Some people aren't able to memorize the case which is an extreme help. But speed comes with experience just like working on bar.
