Looks like notes on customers... like the barrista on register was passing notes to those on bar on each encounter with a customer..

Omg I love this!!!! One of my baristas would be held hostage at the register with an annoying customer and he would send a water through with message on the name line like βhelp me!β or βI hate this man/woman!β π
