I think whole milk helps with the creaminess but I typically get a tall soy decaf latte with 1 toffeenut 1 white mocha, it's a much better version of the salted caramel mocha in my eyes

Toffee nut is amazing, and white mocha with less or half the pumps gives you good sweetness while highlighting the espresso. Another fun drink is a Starbucks double shot on ice and you can experiment with different flavors and milks.

i really like flat white (whole milk is more creamy and ristretto is sweeter) and i usually do blonde but you’d do decaf and then i usually add a syrup.

I LOVE grande white mocha with 3 white mocha 1 cinnamon dolce. The cinnamon dolce cuts the sweetness of the white mocha so it's not too overbearing. Sometimes I'll get 3 shots so that helps a lot with the sweetness.

As far as creaminess goes, stick with half and half. If you haven't steamed heavy cream already, it screams and splatters, and the final product is pretty thick. Imo, breve lattes are probably your best bet

For flavour, if you haven't already tried it, chai lattes with half the pumps are really good & not as sweet, and if you get a dirty chai, you get espresso as well

I’m not sure if you like iced drinks, but I like doing iced white mocha with cold foam. Or you could do toffee nut and hazelnut, those are good combos.
