One time I read a customer review that read something like this. AHEM

"... I just don't understand why when it's so busy they would have a person walking around in the cafe cleaning. I saw a barista walk out from the back and clean the condiment bar in the middle of a busy time period [asumably talking about peak], while me and many other customers are waiting on our drinks."

to be fair, there could be someone on cold bar (iced tea/fraps) and someone else pouring all the coffee/hot tea/cold brew/ iced coffee drinks but those aren't "real" stations

Our store runs a 3 man bar during our busiest peak days. 2 on hot (1 cafe hot bar and 1 drive thru hot bar) and then 1 poor soul on cold bar fhat makes ALL the cold drinks. That + a DTO, DTR, Front register, and an Oven. The lady is talking about our Customer Support doing the lobby spin. <procedes to eye twitch>

I mean, Cold Bar Support and Order Support are definitely real stations that my old store regularly deploys during peak, but once you've staffed the back line all the way out to Handoff, pulling your CS into the production line will just slow things down because no one can move and the counter space gets too cluttered to function.
