When my skin gets that bad, I've found that O'Keeffe's Working Hands cream is the only one that that doesn't sting, plus it heals quick enough to be able to move onto something more heavily medicated.

The only way I’ve been able to repair my skin from the damage is by immediately putting lotion on after drying my hands. It feels gross when you’re touching other things and making drinks, but it’s the only way I’ve been able to keep them from getting dry patches or the rash I’ve gotten from sticking my hands in the sani.

Sounds odd, but try olive oil. You might not have this on hand but sunflower or safflower oils absorb faster into the skin. (Both can be found at grocery stores). If you have allergies to ragweed you can't use safflower. Sunflower oil is less likely to cause issues and is recommended for babies if you want to go the natural way.
Edit: I have overly sensitive dry skin and make balms, lotion bars and soaps for myself. All of those oils are actual ingredients that work well on skin as well as being used in cooking.

I can recommend lathering vaseline, coconut oil, baby oil or something similar (not regular lotion because that does sting at that point) on your hands before you go to sleep. Like, put a TON on. If you can there are cotton gloves available that you can wear under regular disposable gloves to save your skin a little. Also if you have access to a dermatologist in any way they might be able to help you with special lotion.
A few other tips that I was taught: make sure your hands are fully dry after washing them. When you use hand sanitizer never wave your hands to dry it faster, let it dry on its own. Apparently it dries out your hands and doesn't work as well if you wave your hands around. There's also special disinfectant without alcohol that's more oil based if I recall correctly, it's probably hard to get right now but if there's any chance for it I can recommend it for long term. If you can at all, take your special lotion or vaseline to work with you and use it as often as you can after washing and sanitizing your hands. I know you probably have a super fast pace at work so you can't do it but if you get the chance that's what helped me.

My hands were also stinging profusely with lotion the other day. But I had good luck with a gel baby oil. Can’t really do anything while it sits and soaks in but no stinging!

The Head to Toe Balm from Trader Joe's is the only thing saving my hands. It's mostly Shea Butter so if you can get something with that in it you should. Alcohol is in most lotions and that is probably what is causing your hands to sting when you put it on. Eucerin has some good heavy duty lotions that might work as well. I highly recommend putting something on (lotion, cream, etc.) and then covering your hands with Vaseline or Aquaphor and then fabric gloves (I use old socks actually) at night before bed. The petroleum jelly helps to hold the moisture in better. I hope that your hands heal soon!

I’m sorry. Buying heavy duty moisturiser helped me. Weirdly it was the sides of my fingers that completely dried and cracked

Same! Try Aloe Vera Gel, it’s healing and the only thing that’s not burning my lizard hands at the moment
