If you’re steaming juice, please always steam at kids temp. And if it’s something like this (I’m assuming you’re mixing the apple and grace and steam them together), make sure you steam a pitcher of water afterwards to ‘cleanse’ the wand. I was taught this cleaning trick from a former SM.

It’s awesome that you think about that aspect and want to deliver a quality beverage to our customers. I would say that:
1. It was a standard I read some time ago. I think it goes for all juices that are steamed. I was coaching a partner about this and my SM at the time confirmed it too. And I believe that when the ‘Medicine Ball’ got its official Starbucks name HCMT, my SM at the time put up the recipe in the back and it said kid temp. (If anyone finds the recipe or can confirm, just say so. Please don’t post any recipe cards on here)
2. Our water comes out at 200F and it’s way too hot for any tea. So when you first fill the cup with half hot water, a lot of the extraction has already happened. There was a partner on r/Starbucks that had worked at Teavana said that our hot water actually completely ruins a lot of the tea. I believe the partner said Emperor’s Cloud should be not be brewed hotter than 165F.
