Starbuck's cream-base recipe (with cornstarch?) (self.starbucksbaristas)

Dear baristas of reddit,

Most common internet diy recipe for the starbuck's cream base would be water, sugar, and xanthum gum powder. But xanthum gum is not available where i live.
Can i make the base with cornstarch/cornflower instead of xanthum gum? And if so how?

A very few people suggests that recipe, but I'm not exactly sure if it will work. What do you think?

Cornstarch would work as a thickener/consistency control, but idk if it would work as a binding agent against separating. It may also dilute the flavor/sweetness, so it might need a little more sugar to balance out.

Give it a try and experiment a little bit!

I see, but doesn't pectin turn the drink into some sort of jelly? Since its mainly used for making jams and such?
