I remember in previous years my fellow partners would “pay out” their accumulated vacation hours but I was never taught how to do that. Help?

You need to write it in the book. You cannot do a one big payout. Your weekly hours have to be 40 or under. So if you work 30 hours this week, you can cash out 10 hours of PTO.
