I'm gonna cut you some slack here bc you're young. Never, ever, lie about something this easy to verify. Exaggerating your job description at a previous job is something you can sometimes get away, but this is impossible.
If you did get an interview, and then a job offer, employers always require proof of identity (i.e. social security card, state ID, state DL, passport, etc). You will NEVER get away with a lie like this one, and it's a sure-fire way to never get a job with that employer ever again.
Edit: this is something employers have to take seriously bc of child labor laws and company policy. Starbucks, in particular, does not hire under 16 regardless of what the state child labor law is.

you shouldn’t lie about your age, just wait 4 months to apply at sbux

I’m 17, and I applied to Starbucks when I was 16, so Hopefully you’ll appreciate advice from a younger voice. Wait, and apply when you’re old enough, trust me, the Starbucks journey is worth the wait! What I’d do in the meantime is (if you can afford it, Starbucks coffee is expensive lol) go and try to make conversation with the other baristas/SSVs or even the SM when the store isn’t busy! Currently with COVID it’s hard but my current coworkers got to know me a little bit through me going to the cafe to do homework. Starbucks pushes for customer connections, so use this to your advantage! Good luck with your application in 4 months :)

18 y/o barista here, i also started when i was 16. this is great advice and is ultimately what got me hired at my store. wait four more months and make those connections with other baristas, it’ll be so much better in the long run!!!
