It depends on the beverage mix you’re working with. Remember that iced coffees, iced teas and refreshers do not get sequenced. Hot drinks are milk, then shots, then syrup. The reason is that the milk takes the longest, then the shots, and then the syrup so everything kind of finishes up at the same time. So if you have two hot drinks you’re going to steam the milk for the first one, then pull the shots, then pump the syrup. When the milk is done steaming, pull the pitcher down, pull the cup down on the bar, wipe the steam wand with the wiping cloth and blow out the wand for a few seconds. Start steaming the milk for the next drink, cue the shots, pump the syrup and put the cup under the spout. Then, finish the first drink. I hope that made sense. When sequencing in iced drinks you start by pulling the shots. If you’re sequencing (in) Frappuccinos you get them up to the blend stage before you start the next drink. If it’s a cold foam drink, I always do the foam first. I’m better at this in person so if I left anything out I’m happy to clarify.
