I have the blender that is used by starbucks and I've been trying to make the perfect sweat cream cold foam that doesn't immediately sink to the bottom but it never comes out right. I use 3 oz heavy cream, 2 oz 2% milk and 1 oz vanilla syrup... Blend on 3 sometimes double blend... Either sinks immediately or makes whip cream.. Can anyone please tell me what I'm doing wrong? How are you measuring the ounces? Is it by weight? I'm too dumb to figure out if the ratio you're using even makes sense, so I figured something else out
If you want approx 100ml of product (a lil less) use this:

50 ml of heavy cream

30 ml 2 percent

17.5 ml vanilla

I just took the regular proportions and divided it by 20.

Edit: I meant to mention if you're doing the ounces by weight, that's why it won't work. Recipe is using volume.

Edit 2: make sure you agitate it.

I like the idea of dividing by 20 to get to 100ml but wouldn’t it be 32.5 ml of 2%? 650/20

It's 600 ml of 2%. 350 ml vanilla. 1 L (1000ml) heavy cream.

What are the regular proportions? Excuse my terrible math skills, but why divide by 20?

I just divided by 20 to make a smaller amount akin to what you'd use for one drink.

Normal proportion are

1000ml (1l) heavy cream

600ml 2 percent

350 ml vanilla

It's not by weight, it's by volume... What do you mean by agitate... Before I put it into the blender? Thank you for your post, I appreciate it! 😊

I was years ago, I like to experiment at home and thought you wonderful folks were the perfect people to inquire with 😊 should I agitate with a whisk? And for how long? Also how long does unblended sweat cream last in the fridge?

Tbh I wouldn't use it for more that 24 hours because I feel like it settles and no longer works. No specific time, just give it a good mix with a whisk and use right away for best results.

A lot of baristas have that issue within Starbucks as well. Try to mix it well before you put it in the blender. Hopefully that helps you

Yes that does help, thank you! I didn't know you had to mix it before putting it into the blender.. I never see the baristas doing that when I order in store... I would have never known that.. Thanks for that tip! 😊 👍

Not suppose to do this but I add .25 ml more of heavy cream than you’re suppose too LMFSOOO it works great that way

tbh your ratio seems really off. i would consider the recipe that we measure in the steaming pitcher. i would assume in 20oz: 4 oz is vanilla syrup, 4oz of 2% and 12oz of heavy cream. and if you are preparing for just one drink i would estimate a quarter of that would be sufficient so 1oz vanilla, 1oz 2% and 3oz of heavy cream

Does your blender have a round blade? If no, that’s your issue. We have a special shaped blade in our blenders.

Yes I have the aer disc, in the commercial vitamix blender exact same one as starbucks, so I'm really stumped on what I'm doing wrong

Have you tried setting #4? Adding ice before the foam layer on top? Using really cold milk?

Those would be my next recommendations.

I pour my cold brew, and then put the ice, so the ice is on top in the cup, ive tried 4 but it seems to be too heavy like whip cream. The milk comes right out of my fridge so it's as cold as possible. Maybe it's my milk too cream ratios?

Are you blending on the wrong setting? It should be 3 if it’s the same blender

Yes #3, I've even tried #4, that's what makes this so confusing... I'm going to try whisking the mixture before putting it into the blender, do you have any other recommendations?

I think maybe it has to do with making it in large batches and mixing it together with the correct ratios?
