At my store we have two blocks, morning and night block. The morning crew works from open to 2pm and night crew 2pm to close. You can only work within the time frame of your block and switch with other partners in your block. When 2pm hits we sanitize frequently touched surfaces and take all the pitchers, shakers, ice scoops, etc to the back and the night crew brings in new clean ones. Not all stores follow this strictly but mine does.

Block scheduling is when the staff is split up into separate groups. Those groups never overlap on the schedule. The idea is that if someone in Group A gets infected or has symptoms that you have an easier time figuring out who has been in contact with them and needs to isolate. It also means that the other blocks can come in and cover those shifts.
