You literally just whip it until it separates. It gets stuff and fluffy at first, then right when you start to give up it suddenly starts to rapidly separate into curds of butter and liquid buttermilk. Afterwards you just strain it and the liquid left at the bottom is buttermilk, and what's in the strainer is butter!! Add salt if you want and stick it in the fridge and it tastes perfect lol

You whip the heavy cream past being whipped cream. Eventually it will start to turn yellow, and will separate into to layers. Then you just strain it- the solids are butter, the liquids are buttermilk
