Worst part of the whole thing is when the lady came to pick it up I tried explaining how almond milk is actually the absolute worst milk for foam and then she proceeded to tell me she actually doesn’t like the foam at all... MA’AM YOUR ON THE VERGE OF MAKING ME QUIT.

A cappuccino is a extra foamy latte. (A latte is shots of espresso and steamed milk) so when you steam the milk you naturally get foam and you can get more or less depending on how long you aerate it. So a extra dry cappuccino just means it’s almost all foam, basically no milk just straight foam. And extra hot with it being all foam is impossible because the foam doesn’t hold temperature like milk does. So that’s the first thing wrong. Second almond milk doesn’t foam up well at all, like barely enough for a latte most of the time. So asking for it to be full of foam and no milk is also virtually impossible. Asking for all of those together is like asking for a hot Frappuccino... it’s just not going to work no matter what you do.

If I could trouble you with another question? What would it be if you just added the milk to the espresso without streaming it?
I got an espresso machine for my birthday and have had such a good time learning to play with it. It's not as hard as folks make it out to be. Well the steaming of milk is. Y'all are fucking gods on that front. My husband can do it, but I fail no matter how many times he walks me through it.
Anyway, why do people have such a stick up their ass about what they obviously know nothing about? Sorry, I know there's no answer for that, just musing.

Not OP, but a barista nonetheless. If you just added cold milk to espresso, according to Starbucks it would be a latte. Next time try throwing some ice in there, maybe shaking it in a cocktail mixer to make it icy and frothy.
As for steaming milk, try holding the steaming pitcher so that the steam wand is just under the surface of the milk. You’re aiming for the sound of tearing paper, that’s what creates micro foam which is the tasty stuff in lattes.

Well if you add ice and don’t steam it’s that’s how we make the iced espresso drinks! Steaming it takes a while to get used to don’t worry, Your looking for the tip of your steam wand to be just below the surface and you’ll hear a sound like paper tearing, let that happen for a second or two and then push the steam wand back to the bottom, let it finish steaming, and it’ll have some good foam on it!

Never mind trying to make your foam correctly. For now, iced lattes are still delicious, so yes that is acceptable.
For the future, ignore doing it "correctly" and aim for "without having my milk explode over the kitchen." Put your milk in your pitcher, probably about halfway up until you have more experience knowing how much. Put the pitcher over the wand, all the way to the bottom. Turn the steamer on. Pull your milk down slowly until it bubbles. When it is the correct heat, turn the wand off, put your pitcher down, clean your wand, and enjoy your steamed milk however it came out. As long as you didn't burn it, it didn't boil over everything, and it is warm enough, you have succeeded enough for a beginner without a barista trainer and unlimited milk right at hand, and you will only get better from there.
If you were near me and asked, I'd definitely give you a few pointers, but odds are definitely against us there. So try a few things, then get a few pointers from people willing to help, and drink all your successes even if they aren't perfect.

So the problem with the original sticker in the picture is that almond milk doesn’t foam well during the aeration process and ‘extra dry’ in relation to cappuccinos means more foam than usual since cappuccinos are foam heavy drinks already, so when the barista who posted tried to explain that it’s hard to foam almond milk to the customer and the customer responded that she doesn’t like foam, it makes the idea of ordering an extra dry cappuccino kind of ridiculous

My trick for this was just to use two Mastrenas and steam two pitchers at the same time, should give you in the neighborhood of enough foam. Started doing that after I kept re-microfoaming and it just burned the fuck out of my hand

If you don’t have fats (why people get heavy cream in EVERYTHING) and you’re on the keto diet, your body will go into ketosis. It’s when your body gets used to mostly burning fat and it has none so it pretty much goes into shock

There’s an older woman who just started using the app to order, and one day she got a dry soy cappuccino. Made it myself and handed it out no problem. She comes back through the drive through a few minutes later saying that her order was wrong because it’s “a lot of foam” and she wanted NO FOAM. I explained what a cappuccino is and what dry means, and she asked me the best way to order a no foam cappuccino. I wanted to slam my head on the counter

Aerate it a little more than 10 seconds and use a bar spoon to scoop all the foam out of the pitcher
